Scrumptious Saturday - Chicken Divan

What happens when you have a Family day on Foodie Friday, and you're too busy enjoying it to remember the blog you were supposed to write? You get a Scrumptious Saturday instead! 

This week, I decided to switch it up. We have been focusing on quality family time. So I decided, rather than cooking a new recipe myself, I would teach a family favorite to my fiancĂ© and our daughter. But, because I'm a smidge obsessive in the kitchen and knew I'd end up taking over so we had one rule. No mom in the kitchen! I was giving instructions, step by step, without being able to see what they were doing.  So here it is!

Chicken Divan

Step 1:

I asked my fiancé to cube the chicken breast into bite size pieces. Then season and cook. I'm really happy he used our cast iron. It gives food just a bit of extra iron, which in a dish as calcium rich as this, we can use it! Little tip: calcium inhibits iron absorption. I'm proud of him for remembering all four seasonings I asked him to use. We have a history of communication where he will always forget at least one thing if I give him a list. This time he didn't. Great job babe!


Step 2:

This is the step I would probably annoy him with micromanaging. Due to a mild allergy, and interference with my medication, I'm only allowed broccoli in small doses. I prefer to shred it into smaller bits so I feel like I get to enjoy more than I actually do. My loves prefer larger bites. I told him to do whatever he wanted. And this was it. 


Step 3:

This is where our daughter got to step in. Mixing sauce is one of her favorite things. Cream of chicken, little mayo, curry, and a pinch of salt and pepper. It's an easy one. And it's delicious. I was a little worried they'd overdo it with the curry. But everything looks about right. 


Step 4:

Layering the casserole dish, they got to take turns. Daddy put the chicken in, Baby put the broccoli in. Daddy spread the sauce, Baby spread the cheese on top. And they both added the breadcrumbs. Teamwork!

After baking, we were so anxious to try it, we forgot to take pictures of the dish fresh out of the oven. Instead we spooned this deliciousness atop some perfectly al dente farfalle, and dug in! We only just remembered to take a picture of the bowl before we devoured our dinner.

They did amazing! I'm really proud of both of them! Dinner truly was scrumptious. Daddy and daughter make a great team. It was definitely worth the delayed day.
